Paleo Beef Stew – Crockpot

I threw this recipe together and it turned out pretty tasty. I just guessed on the spices, so if you know of a better combo then go for it. I might add a bit of hot pepper next time to give it a kick. By the way, this is a BIG recipe – it almost filled up my large Crockpot.

Ingredients
:

  • 1 small rutabaga
  • 1 sweet potato
  • 5 celery sticks
  • 3 carrots
  • lots of garlic (I used 1 small head)
  • 1 red onion
  • 800g (1.7 pounds) stewing beef
  • 1 cup soup stock (I used chicken ’cause that’s all I had)
  • 1 can tomato paste
  • 1 Tbsp oregano
  • 1/2 Tbsp tarragon
  • 1/2 Tbsp thyme
  • black pepper to taste
  • 2 cups boiling water

Chop up veggies in medium sized chunks, and combine with beef in the Crockpot.


Mix together soup stock, tomato paste, spices. Pour over meat & vegetables in Crockpot and stir to combine. Add boiling water as needed. Cook on low for 7 hours.
